Had a GREAT Valentine's Day. I got to spend it with no less than 6 people I love AND I bought a car. Yay!

I watched a Thanksgiving special with Alton Brown and at the end when everyone left, he showed viewers how he makes Cornish hens. He cuts them so they lay flat, then puts them on a panini press with a couple of bricks on top of it. The hens look squished, but they have a great crispy skin all the way around lol

I am making cornish game hens for the first time, it's me, my husband, and my 5 year old, so 2 should be enough without ANY leftovers! I might make some polenta to go with it, and debating on a salad, I have pears and blue cheese so I can mix those in with greens and I'm done!!

You can also use it in a Fettuccine Alfredo. I boil the pasta, and meanwhile cook the alfredo sauce. Once I've added all the ingredients, I add in some shrimp, and let the sauce come to a boil and thicken. Here's the recipe if you want:

Keep in mind, the only thing I measure out is the heavy cream...everything else, I eyeball, so use your own discretion.

1 pkg. (16 oz.) Fettuccine (I actually use 12 oz. so I have extra sauce)
1 1/2 c. Heavy cream
1 T. butter
1/2 t. salt
1/4 t. ground black pepper
garlic powder to taste
3/4 c. Parmesan
Fresh parsley (you can use dried)

-In saucepan, heat cream, butter, salt, and pepper to boiling over med.-high heat. (this is when I add the shrimp)
-Boil until sauce thickens slightly, about 2-3 min.
-In warm serving bowl, toss pasta w/ sauce and parmesan. (I use the pot I cooked the pasta in...with no water, of course!)
-Sprinkle w/ parsley

Also, when you first add the sauce to the pasta, it will be very thin. The parm. is what thickens it up. Add more or less to your liking. Another thing, this does make A LOT, so if it's just two people eating, I'd cut it in half, because this doesn't reheat the greatest. It gets oily...not sure why, I guess b/c of the heavy cream? Basically, it's the best when it's fresh!

I know you have shrimp, but I also love adding shredded rotisserie chicken into the mix, or just serving it on the side.

Grilling already cooked and peeled shrimp is a bit trickier than grilling uncooked shrimp. If you have a grill tray or basket you can season the thawed shrimp (I like a bit of Cajun seasoning) and just put them on the grill for a very few minutes (3-5 minutes) to get hot and get that grilled flavor. You can also use skewers to keep them from falling through. Just don't overcook them or they will be VERY tough.

Depending on the size of your shrimp tray, you might try grilling half and eating half as shrimp cocktail.

Instead of the crisco and chocolate...I just buy the Chocolate Almond Bark and it melts easily in the microwave. Now my mother would NEVER do that....she has to melt her chocolate chips on a double boiler with paraffin wax. That is how she makes ALL her candy and has all her life and mine.

I have ring of frozen shrimp with cocktail sauce. Is there anything I can do with it other than thaw and seve. Can it be grilled, or do I have the wrong kind of shrimp?

We are having steak and shrimp and not sure what else.

We are going out! Normally we do all home cooking but we are celebrating just passing our 11th year together (almost 6 married), valentines day, and as of tonight the news that we have been approved for our first home!!!!! Happy Valentines Day ALL!

I want what you're making.

We're not doing anything on Valentine's day but a few days later. His mom is a widow, he's the youngest son, and I asked him to take her out to eat. I have lots of Valentine's with him, I decided to share him with his mom. =)

We're having filet mignon, salmon, a green salad and a fresh loaf of bread from the local bakery. (Surf and turf). I may make a shell fish appetizer if it looks good at the market (oysters or clams maybe). For dessert we've having cupcakes (for my son), but I would recommend picking up 2 mini tarts or chocolate cakes (individual serving size) if you don't want to risk leftovers. (You could also serve just the meat or just the fish instead of both. I'm sort of hoping for leftovers for sunday lunch!)

If you work with foods that are naturally individually portioned (like fish, steak, a baked potato, etc...) it should be very easy to avoid leftovers. (Rather than doing 'one pot' dishes like pasta where it's harder to gage portion sizes.)

I'm fixing a lobster tail, 1 cluster of crab legs, a few asparagus(broiled) and a few baby red potatoes..
You can easily make that for 2 people.

Hi, I am so sorry I gave the wrong directions for the chocolate truffles:

1/2 pkg of Oreo Cookies (any flavor)
1/2 pkg (of 8 oz) pkg cream cheese, softened
Crush the Oreos with food processor or in a bag with rolling pin (including the filling). Combine the 2 ingredients. Mix well. Refrigerate for at least 1 hour.

1 pkg semi-sweet choc chips (12-16 ozs)
1 Tbsp Crisco
Melted together.

Remove Oreo mixture from refrigerator from refrigerator make small balls and drop into choc mixture. roll around quickly as the cream cheese will get incredibly soft. Remove and place on waxed paper until hardened. Store in airtight container in refrigerator.

P.S. Instead of using choc. chip combo on top, buy the candy wafers at ( Michaels, AC Moore or even some of the larger grocery stores ). and melt them in microwave. Works real weel. I also will melt a little white chocolate and drizzle over the completed truffle to "fancy it up a bit". You can also add flavoring to the cream mixture (whatever you like). I have done it with peppermint, mint, almond and armaretto. All turned out great and I get requests for these all the time. I went to a party of 500 people and was told that I had to bring these or I would not be allowed to attend. Hope whoever tries them likes them as well as we do here in PA.

Try this:

Salmon Fillet in Puff Pastry

2 Salmon Fillets
2 sheets puff pastry, thawed
coarse salt

Place one salmon fillet on each puff pastry sheet. Sprinkle with coarse salt. Wrap pastry so that fillets are enclosed and place seam side down on a cookie sheet sprayed with cooking spray. Bake at 375 for about 20 - 25 minutes or until pastry is browned.

Serve with steamed rice and veggies and a nice bottle of pinot noir.

My husbands never been to real prison ( just Juvenile Hall.....that doesn't count ) and he'd never eat those things. I wouldn't give them to my kids either.
